This week I had a fun opportunity to enjoy wine and appetizers with a friend. I know she prefers white wine, and she told me she was eating high protein and low calorie. I wanted to create a menu she would enjoy, knowing that I had little time for prep or cooking that day.

Grilled Chicken Tenders with Basil

I decided on Grilled Chicken Tender Skewers with Basil. The recipe is attached, and it includes a bit of aged balsamic vinegar, just enough to add a mild flavor. I currently don’t have a gas grill, and I didn’t have time to fire up my charcoal, so I cooked on my stovetop on a cast iron griddle.

Grilled Asparagus

I added grilled asparagus to the menu. Since I had the griddle heated for the chicken, it was easy to put the asparagus on the griddle for a few minutes. I like to toss asparagus with olive oil and a small amount of salt and pepper before grilling it.

Grilled Pineapple Skewers

I also served grilled pineapple. Grilled pineapple might just be the biggest bang for your buck of any dish. It was especially easy this time because I used frozen pineapple chunks. It was as simple as putting the thawed chunks on a skewer and giving them a few minutes on the griddle. That little bit of effort yielded amazing results.

I went for the best healthy dessert option ever. Fresh raspberries with just a drizzle of chocolate. In this case, less than a quarter ounce of chocolate per person for a very fabulous dessert, ready in minutes. I previously shared this recipe, and I attached a copy to this post.
