Morning Maple Muffins
Morning Maple Muffins are light and sweet with the rich flavor of real maple syrup.

Ingredients
Muffins
- 2 cups flour (2 cups all-purpose flour or 1 cup all-purpose flour and 1 cup oat flour)
- 1/2 cup brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1/2 cup butter (melted)
- 1/2 cup maple syrup
- 1/4 cup sour cream or plain yogurt (optional)
- 1 egg
- 1/2 teaspoon vanilla
Topping
- 3 tablespoons all-purpose flour or oat flour
- 1 tablespoon sugar
- 1 teaspoon cinnamon
- 2 tablespoons butter (cold)
- 1/3 cup chopped pecans or walnuts (optional)
Instructions
- Heat oven to 375 degrees. Line muffin tin for 12 muffins with paper liners or butter muffin tin.
- Combine 2 cups flour, brown sugar, baking powder and salt.

- Whisk together milk, butter, maple syrup, sour cream or yogurt, egg and vanilla.

- Stir together dry and wet ingredients, just until mixed.

- Divide batter among muffins in muffin tin.

- Use a fork to mix together topping ingredients other than nuts.

- Sprinkle muffins with topping mixture. Sprinkle with nuts.

- Bake muffins until they spring back when lightly touched in the middle, approximately 17-22 minutes. Cool at least 5 minutes before removing from tin.

Notes
These muffins can be made with gluten-free flour and with non-dairy butter, milk and yogurt.
