Salmon with Shallots
A quick and flavorful option for enjoying salmon as an entree or as a topping for salad.

Ingredients
- 2 salmon filets
- olive oil
- 1 lemon
- fresh ground black pepper
- 1-2 teaspoons fresh thyme (minced)
- 1-2 shallots (2 small or 1 large, sliced into small pieces)
Instructions
- Place salmon skin side down on a plate. Brush with olive oil. Squeeze 1/4 of lemon over the salmon. Cut remaining lemon into wedges to serve with the salmon. Sprinkle salmon with pepper and thyme.

- Cook shallots in oiled skillet until they begin to brown.

- Place salmon skin side up over the shallots and cook until shallots are mostly brown.

- Flip salmon and continue to cook to your liking.

- Serve salmon with lemon wedges.

Notes
This salmon is great on a salad.ย You can make the salmon at night or on the weekend and add it to your salad the next day for lunch.
