Notes

Any unflavored mayo will work great for making the spicy mayo, including plant-based mayo. Kewpie mayo is a Japanese style mayo that I like to use for the spicy mayo, but if you are watching sodium, you may prefer to use a lower sodium mayo. Kewpie traditionally contains MSG, and you may need to shop around to find it without MSG if you prefer.ย  I have been able to purchase it without MSG at Whole Foods:ย  https://amzn.to/3R97jct
One advantage of making your own spicy mayo is that you can choose the amount of spice. My sweet spot is two tablespoons of sriracha. Sometimes I mix all ingredients except the Sriracha and then divide the mayo in two before adding the sriracha in order to make some more and some less spicy and allow people to choose.
