Tilapia with Corn and Red Peppers

This recipe creates a tasty and satisfying meal without added salt. It is quick to make and can be used for tilapia or other whitefish.

Ingredients

  • 2 fish filets
  • 1 lime
  • 1/8 teaspoon pepper
  • 1/8 teaspoon smoked paprika
  • 1/16 teaspoon chipotle powder
  • 1 1/2 cups whole kernel corn (cooked and drained)
  • 1/2 cup chopped red bell pepper
  • 1/2 cup sliced scallions
  • 1 tablespoon roughly chopped cilantro (optional)

Instructions

  • Mix together pepper, smoked paprika and chipotle powder
  • Lightly sprinkle fish with lime juice and a bit of the spice mix.
  • Fry the red pepper and corn in oil over medium high heat until the red pepper is starting to soften.
  • Add remaining spice mix, scallions and two teaspoons of lime juice. Reduce heat to medium and cook for one minute. Add two tablespoons of water, and stir and cook until most of the water has evaporated. Remove vegetables from pan.
  • Return pan to heat and fry fish in oil in the pan.
  • Serve fish and vegetables with a wedge of lime.
